Whitebait with dill mayonnaise recipe

-          1 lb / 454g of Interseafish brand plain whitebait
-          50g flour
-          2 tablespoons mayonnaise
-          2 teaspoons crushed fennel (from seeds)
-          1 lemon
-          1 teaspoon chopped dill
-          Salt & pepper

Cooking instruction:
Pre-heat the frying oil to 200°C. Mix the crushed fennel with the flour and season with salt and pepper. Mix the mayonnaise with the chopped dill and season again with salt and pepper. Cut the lemon in wedges and you are good to go and start frying.

Coat the whitebait in the flour mixture and fry for about 3 minutes, or until golden brown.

Serve the whitebait with the mayonnaise and some lemon and enjoy!
